Some of the better Cabernet Sauvignons we have found for aging are the: - Lindemans Bin 45 Cabernet Sauvignon (https://www.thebottleclub.com/products/lindemans-bin-45-cabernet-sauvignon-75-cl) - Maison Montagnac Margaux de Monbrison (https://www.thebottleclub.com/products/margaux-de-monbrison) - Chateau Gaudin Paulliac (https://www.thebottleclub.com/products/chateau-gaudin) All of these wines are great for aging as they have a lower ABV than other Cabernet Sauvignons (all are 13% ABV or less) so there is no worry of the wine turning vinegary in the aging process. They also all have fairly high levels of tannins so they will smooth out nicely over time, whilst their higher acidity and sugar content due to their flavour profiles incorporating deep blackcurrant blueberry notes makes them perfect for aging. We would recommend cellar aging between 5-10, but certainly no more than 20.
