Wash the skin on sweet potatoes, prike with a fork, toss in some olive oil and a sprinkle of salt. After we have our fill for dinner, I will cool, peel and dice them and save for the next mornings brunch. I love using them in my bread pudding. I will fork mash the sweet potatoes with some brown sugar and top a bread pudding with them before baking. In the final few minutes of baking, add some marshmallows!
