At our restaurant, Vetri, we maintain consistency a number of different ways. 1- everyone in the kitchen has access to an updated recipe manual with all of the methods and amounts standardized for restaurant production. As well as pictures 2- we conduct a line check on each station before service tasting all of the components each day. 3- nothing leaves the kitchen without a chef or sous chef on expo inspecting it for consistency. 4- our sous chefs and chefs have daily and weekly meetings to ensure we are aware of trending issues and that we are all on the same page.
To ensure consistency across shifts for food quality, Chef's utilize recipe management and batch cooking techniques. For example, if we were to make a large batch of tomato soup that would run for the day, we would make the large batch and then cool down whatever amount was necessary for the next shift. Reheat the soup close to service time for a consistent and quality product. Technology such as blast chillers have allowed us to make great strides in preserving both quality and consistency of menu items. To ensure consistent quality, it is important that all food product that comes into the kitchen meets the highest standard. This entails training the purchasing crew to inspect items as they are delivered. Open boxes, weigh bulk items and check quality before accepting any deliveries.

This helps catch any issues and ensures everything meets the restaurant's standards, no matter who’s cooking.
