A large amount of my consulting is around enabling AI / tech data, but on the other side of it, there should definitely be better DEFAULT safeguards for us as consumers. As a practice I adjust settings to opt out of market research or other data sharing (i.e Apple Watch > Settings > Privacy & Security > Research Sensor & Usage Data) -- even turned my Siri off -- and often use throw away emails when I sign up for services. I did this for Strava when I signed up as an example. Also it's important to only download the apps you need and to check the permissions they ask for, and delete anything you're not using again. Not opting to back data up in the cloud helps too. Turning off syncing helps too; ie Apple watch > Health, then turn off "Sync this iPhone." But, even with all of that said, I think everyone will be exposed at some point, so at best it's about limiting exposure and risk, not cancelling it out. I have already seen where my data is on the dark web so I have to at this point freeze all my credit with the three credit bureaus. Also, while I do run with my iphone, I have at this point deleted Strava, and often leave the phone turned off in my fannypack unless I get lost or need to call for emergency.
The best option is to treat your personal data like a passport—keep it under strict surveillance and know for sure who can reach it. From my point of view, the main danger does not come from the gadget but from the settings that are commonplace and that most people never bother to change. Data sharing with third-party partners is the first thing you should always do, go through any "research participation" questions, and don't connect your device to every application that requests it—those very integrations are often the ones that silently lead to data brokers getting in. I would also suggest the use of anonymised accounts wherever possible and to support those brands that practice transparency in how they receive, store, and encrypt your biometrics.
Probably the easiest solution is to use default apps (e.g. those on your iPhone) and not third-party software you can download from the app store. If you're really keen on using an app (such as Strava or something else), read their terms and conditions before accepting anything to understand what data you're giving away and how it's going to be used. Personally, I wouldn't give away any data related to my health or my training. It's perfectly fine to give away data on how you use an app, e.g. which features you use, how much you use the app for and similar. Personal data is off limits.

Third, Companies that offer "free" services often monetize your data. Remember noone will ever do or offer something to you for free. That should be the price. And in e-commerce world this price is your sensitive data.

Establish a special email address on health apps only. Also do not post these to your main accounts or your social media. The less your health information is associated with your larger digital identity, the more difficult it is to create comprehensive profiles of you. There is the twist to all it, delete the old data frequently. The majority of applications allow clearing past health data. The question is, when you are not actually actively using those six-month sleep scores then why just leave them lying in some database somewhere? My clearance is once every quarter since when that information is there, you no longer have the control of where that information goes.
