Hi Beth, I am a simple person with a simple way of making breakfast. The key is to prepare a protein for the week, then add your grains (or other food) as you need them. One simple breakfast idea I like to make using this method is a whole wheat English muffin topped with scrambled eggs and fresh spinach. This is a great breakfast option because it is fast to make and gives me both protein and whole grains at the same time. In my experience, this combination provides enough energy to get through the morning and avoid those big afternoon drops in energy I used to have. In addition to the spinach and egg breakfast, some of my other options include: reheating roasted vegetables, beans on toast, a quinoa/lentil grain bowl, or even a savory wrap made from a pre-made protein base. If you'd like, I could send you some sample menus or give you a few examples of how to create multiple different breakfasts using one single protein base. Best, Silvia Lupone Owner, Stingray Villa
