Indigenous to the Philippines, ube quite literally looks like any crop you'd see growing underground, but you only need to break off a piece of it to see the bright purple pop of colour on the inside. While it may look the slightest bit unnatural, rest assured it's entirely natural, and delicious. If I had to describe the taste of ube, I'd say it has a distinct vanilla taste combined with a slightly nutty flavour. As of late, ube is having the same rise to prominence as matcha did a couple of years ago. Most dessert shops and cafes have started crafting ube-based desserts such as ice cream, tarts, cheesecakes and more. Recently, I took it upon myself to experiment with ube and based on a recipe I saw online, I decided to bake ube oreo cookies, and let me tell you, the flavour combination pairs wonderfully. I think what makes ube stand out the most is that it can be treated as a blank canvas. I've not tried an ube combination I've not liked yet, and I'm convinced that its earthy vanilla flavour pairs well with most desserts if not all.
