We save vegetable scraps to create rich, house-made stocks and sauces, ensuring that nothing goes to waste while enhancing the depth of flavor in our dishes. We also prioritize whole-animal butchery, purchasing whole proteins and using every part efficiently. Trim from beef, chicken, and other proteins is repurposed into ground meats, sausages, or other preparations, reducing excess waste and maximizing our ingredients. By taking a mindful approach to sourcing and preparation, we not only create incredible food but also minimize our environmental impact-one dish at a time.
At our restaurant, we've really focused on minimizing food waste, which is a huge issue in the industry. All organic waste from our kitchen now goes into compost bins, which are then turned into nutrient-rich soil by a local composting facility. This not only reduces our landfill contribution but also supports organic farming practices in our community. It’s a win-win for us and the planet, showing that even small changes can make a significant impact. Plus, customers love knowing that dining with us supports a greener future!
