One of my favorite family recipes has to be Cyprus-style moussaka. It’s a traditional dish from Cyprus, where much of my family is from, that has been in our collective recipe book for generations now. No surprise then that the Cyprus version of this classic Greek eggplant and ground beef bake is what I most fondly associate with home cooking and comfort food. My mum’s version was always homemade so it was well worth the effort, letting the flavors really sink in to the vegetables before baking them in a delicious cream sauce. We would layer potatoes thickly on top of a generous helping of eggplant, beef and spices before pouring over just-right tomato sauce made especially for moussaka. Growing up with Cyprus-style moussaka will make me cherish it forever!

Allow to rest for 15 minutes before rolling to about and ? inch thin and cutting into 1 inch squares. When the vegetables are well done, season with salt and pepper to taste. Mix in the parsley and thyme. Cover and simmer for 20 minutes after adding the dough squares. Chicken bullion can be used to fortify stock. I like mine served in a bowl of soup with fresh bread and apple butter on the side.
